Beetroot Hummous And How To Make It
This beetroot humous is the most glorious colour and will brighten up any buffet table or evening supper or snack. It simply could not be easier to make. Literally put it all in a food processor and blend.

3 Medium Beetroots Ready prepared or boiled and cooled.

1 can Chickpeas
-
1 Garlic cloves
-
Juice of 1/2 Lemon

1 tbsp Parsley
- 1 tbsp Tahini
- pinch salt

1 tbsp Olive oil
-
2 tbsp Almonds or radish to garnish

10 mini toasts or vegetable crudities, sliced avocado
I love this dish, apart from being super easy, and insanely quick it looks really impressive and vibrant. I love the garlicky taste and its not massively unhealthy. If during lockdown you are going to nip to the fridge for a snack, better this than something wholly more calorific, it's great with crudities so almost guilt free!
